From July to September 2017 French chef Michel Roth will be create signature dishes for Air France First Class, La Première. The menu will include a new starter and six main dishes, two each month, which have been created in the Servair Culinary Studio.
Michel Roth has been awarded several Michelin stars and have several prestigious titles such as Bocuse d’or and Meilleur Ouvrier de France in 1991 and Chevalier of the Legion of Honour in 2006.
The new signature starter, served in July, August and September, is the Lobster medallion with green asparagus and raspberry vinaigrette.
The main courses will change each month.
July 2017:
- Duo of large shrimps and squids, lobster sauce perfumed with tarragon, red rice and baby spinach;
- Chicken supreme with rosemary, fine sweet peppers and stuffed zucchini tart.
August 2017:
- Stewed verbena veal, vegetable fricassee, morel mushrooms, baby carrots, baby zucchinis and artichokes;
- Slow cooked bass, mussel cooking juice with cream accompanied with green vegetables, candied lemon peel with salt and cherry tomato fry
September 2017:
- Beefchuck foie gras accompanied with asparagus and ceps;
- Chicken supreme with olives and black truffles, poivrade artichokes and macaroni gratin.
